Too many raspberries cordial {Recipe}
Here is an idea for all those raspberries spilling out of your fridge.

Ingredients
  • 2quarts raspberriesfresh is preferred, but frozen will work, too
  • 175ml vodka80-100 proof
  • 3cups sugar
  • 2quarts wateroptional if you want to dilute it
Instructions
Day 1
  1. In a very large (6-quart minimum) bowl or pot, dissolve sugar into vodka.
  2. Add berries. Cover and set aside for 1-2 weeks.
Day 7 (or anything up to 14)
  1. Strain out the berries using a single layer of muslin or a several layers of fine cheesecloth. Squeeze all the juice out.
  2. Transfer to storage jars and label. The vodka should take care of the preservation as long as it is strong enough. If you used a lower proof of vodka, you may want to store it in the refrigerator.
  3. Enjoy the boozy berries that are left over, but don’t share with the kids.
